Ingredients :

  • 2 cooked chicken breasts
  • 1 lemon
  • Fresh herbs (parsley, basil, or coriander)
  • 4 large tortillas
  • 1 lawyer
  • 1 tomato
  • Salt and pepper

Preparation :

  1. Chop the chicken breasts in small pieces.
  2. Press the lemon and mix the juice with finely chopped herbs, salt and pepper.
  3. Add the chicken to this mixture and leave to marinate for 10 minutes.
  4. Crush the avocado and cut the diced tomato.
  5. Lightly warm up the tortillas (if possible) and garnish them with marinated chicken, avocado and tomato.
  6. Wrap the tortillas and serve immediately.

 

2. Mediterranean salad in verrines

Ingredients :

  • 1 cucumber
  • 1 red pepper
  • 200 g of feta
  • 100 g black olives
  • 1 small red onion
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper

Preparation :

  1. Cut the cucumber, pepper and onion into small dice.
  2. Crumble the feta and pit the olives before cutting them into rings.
  3. Mix all the ingredients in a large bowl.

3. Garlic and lemon shrimp skewers

Ingredients :

  • 300 g shelled shrimp
  • 2 garlic cloves

  • 2 tablespoons of olive oil
  • Fresh parsley
  • Salt and pepper

Preparation :

  1. Chop the garlic and press the lemon.
  2. Mix olive oil, garlic, lemon juice, salt and pepper in a bowl.
  3. Marinate the shrimp in this mixture for 15 minutes.
  4. Put on the shrimp on skewers.

  • Some crushed nuts
  • Fresh thyme (optional)

Preparation :

  1. Cut the baguette into slices and slightly grill.
  2. Spread each slice of goat cheese.
  3. Sprinkle with a drizzle of honey and sprinkle with crushed nuts.
  4. Add fresh thyme for an additional flavor touch.

Ingredients :

  • 200 g of quinoa
  • 1 cucumber
  • 1 yellow pepper
  • 100 g cherry tomatoes

  • 1 tablespoon of apple cider vinegar

  • Salt and pepper

Preparation :

  1. Cook the quinoa according to the instructions of the packet and let it cool.
  2. Cut the cucumber, the pepper, the cherry tomatoes and the avocado into small pieces.
  3. Mix all the vegetables with the quinoa in a large bowl.
  4. Season with apple cider vinegar, olive oil, salt and pepper.
